Syrah
This syrah was made using old world methods for fermentation. The grapes were hand picked into bins and the fermentation was started without destemming the grapes. Leaving the stems in the must creates a very earthy character making the wine complex and powerful. This wine is quite smoky and gamey enabling it to be enjoyed with wild game such as deer or elk. As with most syrah it has a certain affinity with lamb.
